Fairmont Cheshire, The Mere is set to bring a more polished kind of country-house escapism to the North West when it opens on 10 July 2026. Set just outside Knutsford, within 157 acres of Cheshire parkland, the hotel looks poised to reintroduce one of the county’s best-known addresses with fresh confidence. It has the elements travellers increasingly want from a UK countryside break: space, water, wellness, good food, a proper golf course and the faint but welcoming feeling that London is not the centre of the universe after all.
The setting is its strongest early argument. The hotel sits beside The Mere Lake, with views across water, fairways and mature trees, giving it a landscape that feels immediately restorative without tipping into sleepy. Cheshire’s countryside has always had a quietly affluent rhythm, less dramatic than the Lakes or the Highlands, but appealing in its own composed way. Here, the appeal lies in ease: a weekend that can move from spa to lunch, from golf to drinks, from lakeside walks to a long dinner, without anyone needing to over-organise the day.
The property itself has undergone a substantial restoration, redesign and expansion before its Fairmont debut. There will be 116 rooms, including 23 luxury suites, shaped for the expectations of a modern luxury resort rather than a traditional golf hotel with upgraded cushions and optimistic lighting. The rooms and suites are expected to lean into calm, contemporary comfort, with lake, golf or countryside views doing much of the atmospheric work. The point, one suspects, will be less about design theatrics and more about creating a reliable, grown-up base for a restorative break.
Dining should give the hotel a broader appeal beyond the usual spa-and-golf crowd. Gordon Ramsay at The Mere will bring refined British cooking to a lakeside setting, with signature dishes, a serious wine list and terrace dining. The Orangery will handle the more leisurely rituals of afternoon tea, champagne, cocktails and lighter bites, while The Club Lounge will offer all-day dining overlooking the lake and championship course. It sounds sociable without being scene-driven, which is exactly the note a Cheshire retreat needs to strike.
Wellness is clearly one of the hotel’s bigger ambitions. Fairmont Spa at The Mere is planned as a substantial destination in itself, with three pools, seven thermal experiences, a Technogym fitness studio, outdoor classes, treatment spaces and private cabanas. Treatments draw on names including 111SKIN, Wildsmith and Kama Ayurveda, giving the spa a more considered identity than the usual menu of vague relaxation and suspiciously expensive candles. For guests, it should make the hotel feel less like a single-purpose golf resort and more like a well-rounded countryside escape.
Golf, however, remains part of the property’s character. The 18-hole championship course, originally designed by James Braid, is set across beautiful parkland with water, ravines, and mature planting worked into the challenge. For non-golfers, that still matters. A good course gives a hotel structure, views and a sense of estate life, even if your own relationship with golf begins and ends with pretending to understand handicaps.
What the Fairmont Cheshire promises is a thoughtful rebalancing of this familiar address. It's not trying to be a wild rural hideaway or a grand ancestral pile. Its appeal sits somewhere more practical and quietly luxurious: lakeside calm, smart dining, serious wellness, championship golf and a location that works for Manchester, Cheshire and weekend travellers wanting polish without performance. If it delivers on the promise, this could become one of the North West’s most useful luxury country retreats.
